Food Friday: Summer Salad Series

Some of you may recall that last year I attempted a summer salad series. 
I'm hoping to do something similar again this year. However I need your input, please email or leave a comment of your favourite summer salads. The more submissions the better.
AND....
....all participants will go into a draw for a prize!  Only one entry per person no matter how many recipes you send...sorry. Have to be fair. The prize....nothing big but super cute :)
I'll take recipes until next Thursday - May 7th

Here are SOME of the salads I've had on my blog so far.....
Broccoli Salad
Patti's Strawberry Poppyseed Salad

Kristen's Greek Salad
1 english cucumber sliced
1 green pepper sliced
1/2 red onion cut in slices (whole onion if it's smaller)
1-2 pkgs. cherry tomatoes
Kalamata olives(but Kristen prefers the zesty green olives)
Feta Cheese (buy a 250g container of the stuff....that'll do)
Dressing:
Little bit of olive oil
Tbsp sea salt (you know the bigger stuff)
¼ tsp of pepper
2 tbsp oregano
½ lemon juiced
Christa's Chicken Caesar Salad:
1 head romaine lettuce
3 tbsp Renee's Mighty Caesar Salad Dressing
3-4 strips cooked bacon (not too crispy) crumbled
2 tbsp FRESH parmesan cheese (not that powder Kraft stuff...yuck)
1 cooked boneless skinless chicken breast
Wash & pat dry lettuce (or use a salad spinner)
Mix in dressing and bacon
Slice/chop chicken and place on top of salad
Sprinkle cheese on top of salad.
SERVE! Easy and the BEST Caesar salad ever....if you don't have Renee's Mighty Caesar dressing then don't even bother making this recipe. The regular Renee's caesar dressing is good too but mighty has more garlic thus more kick...yum! Also notice I don't add croutons...just don't like them in this salad. Takes away from the rest of the ingredients. Enjoy.
Ana's Macaroni Salad
1 pk macaroni or baby shells
1/2 red pepper
1/2 green pepper
1/2 red onion
1 carrot
olive oil (1 time around the bowl approx)
1/2 cup of Mayo
1/2 cup sour cream
salt and pepper to taste
**secret ingredient the juice of pickles (a very small splash)**
In a large bowl finely dice up your peppers, onions, carrot, then add your cooked pasta drizzle your olive oil and mix. Add your mayo and sour cream mix and then add the secret ingredient....
Place in refrigerator over night and serve.
Holly's Spinach Salad
Organic Spinach 
mushrooms
bacon
poppyseed dressing

Spinach and Mushroom Salad

INGREDIENTS
4 slices bacon
2 eggs
2 teaspoons white sugar
2 tablespoons cider vinegar
2 tablespoons water
1/2 teaspoon salt
1 pound spinach
1/4 pound fresh mushrooms, sliced

Cook bacon, crumble, and then set aside. Save 2 tablespoons of bacon fat.

Hard boil eggs then peel and cut into slices or cubes. Set aside.

Return the bacon fat to a skillit and add the sugar, vinegar, water and salt.

Wash spiniach and remove stems. Put into a salad bowl. Pour in warm dressing and toss. Garnish with mushrooms, bacon and eggs.

I love this receipe and its very yummy. Everyone that I have known to try it absolutely loves it. I hope you do too. :)

Oh I have another one

INGREDIENTS
2 cups of califlower
2 cups of broccoli
A few handfuls of raisins
A few slices of bacon
About 4 or 5 tbsp of mayo
Milk
White Sugar.

(Sorry about the lack of exact amounts on the ingredients but I always just "throw" this salad together without measuring anything. lol)

Chop the califlower and broccoli into bite size pieces. Throw in a couple handfuls of raisins and add chopped bacon.

Mix: Mayo with milk to make it runny enough to coat the broccoli and califlower. Add sugar to taste.

Add dressing to salad, toss and enjoy. Another one that I make for whatever party I'm attending and everyone loves it. Easy to make too. :)
