Food Friday: Romain Lettuce

This weeks focus: Romaine Lettuce
"Due to its extremely low calorie content and high water volume, romaine lettuce -while often overlooked in the nutrition world-is actually a very nutritious food. Based on its nutrient richness, our food ranking system qualified it as an excellent source of vitamin A (notably through its concentration of the pro-vitamin A carotenoid, beta-carotene), vitamin K, folate, vitamin C, manganese, and chromium. Romaine lettuce also emerged from our ranking system as a very good source of dietary fiber and 6 vitamins and minerals"
With that in mind here's some salad suggestions for this week:
Monday - Honey Ham & Chef Salad
My version of chef salad is VERY simple, romaine lettuce, shredded carrot, cucumber (if you like it, I don't) and shredded cheddar cheese with FRENCH dressing. Goes really well with the ham.
Tuesday - Zesty Italian Chicken Salad
Grilled chicken breasts, romaine lettuce, shredded cheese, additional veggies of choice & ZESTY ITALIAN dressing (this is a lower calorie choice dressing).
Wednesday - Steak Salad
My version of steak salad....you grill your steak or pan fry it, however you like it. Then slice up and place on top of romaine lettuce, with a bit of mozzarella cheese and your dressing of choice BALSAMIC VINAIGRETTE (Kraft has a few good choices)
Thursday - Pan seared Scallops with Salad
Fry some bacon and put aside, then add your scallops to the bacon grease and fry. Mix your salad using romaine lettuce, the cooked bacon (just crumble away) chopped red & green pepper (green pepper optional but red pepper is a must), and RANCH or PEPPERCORN RANCH dressing. Seriously the combination of red peppers & ranch dressing reminds me of a veggie platter. I just love the mix, I made it up last summer and have since called it Christa's Veggie Platter salad :) And what goes better with scallops than bacon? Nothing right? Trust me, it's a meal you'll enjoy.
Friday - Chicken Caesar Salad
Think this one is self explanatory but I will give you a friendly reminder to use RENEE'S MIGHTY CAESAR dressing.
I love trying new salad combinations, various meats, cheeses and veggies, but especially the dressings. Please share your combinations.....I can't wait to try them!! Oh and don't forget another salad option for this week Patti's Strawberry Poppyseed Salad

Another yummy salad is made with chopped raw broccoli and califlower - add raisins and bacon (or I've heard of cheese too) then add mayo mixed with sugar to taste and milk to make the mayo runny. I LOVE LOVE LOVE this salad and you can always make as much as you want. :)
