I've officially decided that I can't pick my favourite season.
I love summer, the heat, everything in full bloom, colourful, full schedules, late nights....
Then there's Fall which might actually be my favourite, that cool crisp air, new beginnings, I find Sept I'm more productive starting a new project than say Jan 1st. And the colours, ohhhh when the leaves change colours :)
Winter, I don't really enjoy being cold but boy do I love snow! Quiet nights, curled up in a blanket reading a good book or watching a movie.
And now to today....spring! To be truthful it's probably my least favourite season, until this year.
I love walking out the front door to hearing the birds chirping, the warmth in the air and longer daylight hours just puts a light 'hop' in my step. It get's me to thinking about summer days to come, summer visits with friends and family.....summer entertaining!
Yeah baby! I love summer entertaining. Mainly because hubby is the grill king and I the bbq junkie.
But it also means, overnight guests and the MOST important meal of the day breakfast.
Seriously breakfast is awesome and the options are endless.
I find when you have guests breakfast usually ends up being brunch. So without further ado, here are some ideas for breakfast / brunch for your summer entertaining.
First for the big eaters....
BIG HONKIN' BREAKFAST
Which includes:
2 eggs (fried, scrambled, boiled), 2 slices of toast, hashbrowns, and choice of bacon, sausage or ham. Or all three :)
Along with juice and tea/coffee
CONTINENTAL BREAKFAST
I consider this the dry breakfast cause no cooking required. This would be a spread of the following:
Bread, Bagels, Muffins and various Cereals.
I would recommend a few different variations of cream cheese (strawberry, herb & garlic, roasted red pepper & plain), various jams & other spreads (cheese whiz & peanut butter)
Along with milk, juice and tea/coffee
PANCAKES
self explanatory....be creative and add blueberries or chocolate chips for new flavours
OMELETE BAR
Have yourself or you significant other ready with a HOT frying pan or griddle
Let your guests pick one egg or two (or three) and then they tell you which "extras" they want added.
Some ideas:
Various meats: Ham, bacon, chicken....
Various shredded cheese: Mozza, cheddar....
Various veggies: Peppers, onions....
Mix well, fry and voila!
QUICHE
Oh how I love quiche.....I call it an omelete in a pie shell.
One of my many quiche recipes is as follows....
Shredded carrot
Chives
Ham or cooked Bacon
VERY finely chopped broccoli
Shredded cheddar cheese.
Mix well with a splash of cream, salt, pepper & chili flakes
Bake at 350 for approx 45 min.
**HINT** prepare everything the night before in a bowl. Cover and refridgerate.
In the morning, pre-heat oven. Poor mixture in a ready made pie shell and bake.
While baking, set your table, brew coffee, chase around the kids, etc.
Serve with orange slices & fresh strawberries/raspberries.
If you're not expecting guests this summer try one or two of these recipes this weekend.

The best pancakes I have ever had is a recipe I saw on EverydaY Italian. Giada mixes about a cup or so of ricotta cheese into the batter. It's so good! Try it sometime - you'll never want ordinary pancakes again.
