Food Friday: Meal Plan week of Jan 19th

So how are the meal plans going for you so far? I would like to say that even though I share a lot of recipes on here I very rarely make my meal going "exactly" by the recipe, I almost ALWAYS tweak it in some way shape or form. Just wanted to share that in case some of these cause you to feel overwhelmed or if you don't like all the ingredients/spices or you have a better substition, especially if you're going with no salt or low fat vareities.

Monday - Chicken, Mashed Potatoes & Sauteed Broccoli
I fry onions in olive oil then add broccoli to the pan when the onions are almost clear, then add "vegetable seasoning" by Clubhouse seasonings mix well and put lid on frying pan to fry/steam the broccoli.
Tuesday - Grilled Salmon & Basmati Rice
Mix equal parts of maple syrup, dijon mustard and bbq sauce. Marinate your salmon and then grill. Serve with basmati rice.
Wednesday - Turkey Manicotti with Garden Salad
This recipe is from the tv show "Fixing Dinner" the curry mixed with the mushroom soup puts such an AWESOME flavour on this!!! Seriously :) Even if you don't like curry!
Easy Turkey Manicotti
• 1 lb. (450g) ground turkey
• 1/2 tsp Mrs. Dash Table Blend seasoning
• 1 tsp curry powder
• 1/2 tsp pepper
• 1 can cream of mushroom soup (384ml)
• 1/4 soup can 1% milk
• Cooking spray
• 8 oz (250g) manicotti noodles
• 1 x 8 oz tub 1% cottage cheese (250g)
• 1 jar of your favourite pasta sauce (700ml)
• 1/4 cup low-fat grated Parmesan cheese
• Aluminium foil
Directions:
Brown ground turkey in a large nonstick frying pan or work at medium-high.
Once meat is thoroughly cooked add: spice, soup and milk to pan, in that order.
Mix well to combine and then remove from heat.
Spray lasagne or cake pan with cooking spray.
Spoon filling unto uncooked manicotti until ¾ full. When all shells are filled and in pan, spoon cottage cheese over top, then spoon sauce over top.
Sprinkle on Parmesan and cover tightly with foil, shiny side down.
Bake in oven, set timer for 50 minutes.
When timer rings for manicotti, uncover.
Grate cheese directly over top.
Return to the pan to oven and set oven to broil.
Watch it carefully as it only takes a couple of minutes to bubble up.
Thursday - Steak & Kristen's Greek Salad
Grill your steak and make this salad to go with it!
1 english cucumber sliced
1 green pepper sliced
1/2 red onion cut in slices (whole onion if it's smaller)
1-2 pkgs. cherry tomatoes
Kalamata olives(but Kristen prefers the zesty green olives)
Feta Cheese (buy a 250g container of the stuff....that'll do)
Dressing:
Little bit of olive oil
Tbsp sea salt (you know the bigger stuff)
¼ tsp of pepper
2 tbsp oregano
½ lemon juiced
Friday - Take out/Frozen dinner Night!!
