Food Friday: Meal plan for week of Jan 12th

Happy Friday....I hope your attempt at introducing at least 1 whole grain went well last week.
This week no lessons, no lectures...just the meal plan:
Monday: Rosemary Dijon Chicken & Roasted Potatoes
Rosemary Dijon Chicken recipe below....I would bake the potatoes while chicken is baking...may take some time (approx 45 min - 1 hour) but it'll all be ready the same time and you can unwind from your busy workday or start laundry, etc while waiting....multi tasking :)
1/2 cup Hellmann's Real Mayonnaise 125 mL
1/4 cup Dijon mustard 50 mL
2 tbsp lemon juice 30 mL
1 tbsp finely chopped fresh rosemary or 2 tsp crumbled dried
2 garlic cloves, minced
6 chicken breasts
In a large bowl, combine the mayonnaise, mustard, lemon juice, rosemary and garlic.
Put chicken in shallow dish and cover with mixture. Bake at 350
Tuesday - Easy Shrimp Pasta for Two   (this is a Kraft Canada Recipe)
I tried this a while back and it's yummy :)
Ingredients:
2 Tbsp. Kraft Balsamic Vinaigrette Dressing
1/2 lb. (225 g) uncooked large shrimp, peeled, deveined
120 g fettuccine, uncooked
1 tomato, chopped
1/4 of 250-g pkg. PHILADELPHIA Brick Cream Cheese, cubed
2 Tbsp. chopped fresh basil leaves, divided
2 Tbsp. KRAFT 100% Parmesan Finely Shredded Cheese
Directions:
POUR dressing over shrimp in small bowl; cover. Refrigerate 20 min. to marinate. Cook pasta as directed on package. Meanwhile, heat large skillet on medium heat; add shrimp. Cook 3 min. or until shrimp turn pink, stirring frequently. Remove shrimp from skillet, using slotted spoon; cover to keep warm. Set aside.
ADD tomatoes, cream cheese and 1 Tbsp. of the basil to same skillet; cook and stir 3 min. or until well blended. Add shrimp; cook until heated through, stirring occasionally.
DRAIN pasta. Place on large serving platter; top with the shrimp mixture. Sprinkle with remaining 1 Tbsp. basil and the shredded cheese.
How to Sauce It Up
If you prefer it saucier, stir a small amount of milk into the shrimp mixture.
Wednesday - Turkey Burgers
You will need:
Ground Turkey meat (chicken is fine too)
Chopped Red/Yellow/Orange Pepper (your choice or a bit of all three)
Chopped Red Onion
Minced Garlic
Salt & Pepper to taste
Dash of chili powder (optional)
Bread Crumbs
Mix all ingredients well and form into patties, drizzle a bit of olive oil and grill. Serve with onions, lettuce, tomatoes, pickles, etc etc etc as your toppings. I personally load mine down with bacon, cheese, ketchup, mayo and hot pepper relish :)
Thursday - Slowcooker Chicken & Rice
Put a whole frozen or thawed chicken in your slowcooker on LOW before you go to work, about 3/4 cup of water on the bottom so it doesn't dry up, add whatever spices such as salt, pepper, paprika, then some onions and when you get home cooked chicken!! Whip up some rice with it and dinner is served!! Or even microwave a Bistro Express Rice pack and dinner is literally ready in 5 minutes.
Friday - Take out/Frozen Dinner Night!
Instead of keeping it as pizza night let's just call this an easy night...the night that you order take out or cook that frozen meal such as chicken nuggets or a frozen pizza, etc.
